Chicken potato dish with sweet mustard and tarragon: very creamy and delicious

Ingredients:
1.2 kgs of potatoes (2 lbs and 7 oz) (oil, salt and pepper)
500 grams of chicken breast (1 lbs) (+ oil, salt and pepper)
1-2 red onions
500 grams of mushrooms (1 lbs)
Oil
Salt
Pepper
500 ml of heavy cream (2 cups)
1½ tbsp of sweet mustard
1½ tsp of tarragon
2 tbsp of flour
Fresh parsley
Directions:
Mix the potatoes with oil, salt and pepper then bake at 356°F (180°) for 35 minutes.
Brown the chicken in a skillet. In the same skillet cook onion, mushrooms, oil, salt, pepper. Then add heavy cream, mustard, tarragon, flour and parsley. Finally add and mix chicken and potatoes.
