Cheesecake with wild strawberries: a dessert with a unique flavor

Ingredients:
300g cookies
50g toasted almonds
1 tablespoon honey
80g melted butter
500g cream cheese
250g ricotta
200g sugar
150g whipped cream
4 eggs
25g all-purpose flour
150g wild strawberries
1 teaspoon brown sugar
1 gelatin leaf
Directions:
Blend cookies and almonds, then mix with honey and melted butter. Crush in the mold and refrigerate for at least 30 minutes.
In a bowl mix the cream cheese, sifted ricotta, sugar, cream, lemon peel, eggs and flour. Mix and pour over the base. Bake at 180°C (360°F) for 30 minutes and at 160°C (320°F) for another 30 minutes.
Cook the wild strawberries with the sugar and boil, then add the gelatin (previously placed in water). Pour the mixture over the cheesecake.
