New York cheesecake: the American dessert that will surprise you

A Chinese pastry chef prepares the famous New York cheesecake.
Ingredients:
Base:
70g crackers or dry biscuits
20g melted butter
Cheesecake:
200g cream cheese
100g sour cream
65g brown sugar
8g cornstarch
2 eggs
130ml cream
12ml lemon juice
1 teaspoon liqueur
Raspberry sauce:
100g frozen raspberries
30g sugar
1 tablespoon lemon juice
Base:

65g brown sugar

12ml lemon juice
1 teaspoon liqueur
Raspberry sauce:
100g frozen raspberries
30g sugar
1 tablespoon lemon juice
Directions:
Crush the biscuits and mix them with the melted butter, then crush them on the bottom of the mold (15 cm diameter). Refrigerate for at least 30 minutes.
Mix the cheese with the brown sugar, then add the sour cream, starch, eggs, cream, lemon juice and liqueur. Strain the dough and pour it on the base and place the mold on a baking sheet. Fill with boiling water and bake at 300°F s for 50 minutes.
In a pan cook the raspberries with sugar and lemon, then filter and garnish the cheesecake.
