Potato balls: the unique idea to reuse stale bread!

Tender inside and so crispy outside, you won't be able to stop at one!
INGREDIENTS

6-7 potatoes (700g);
salt and pepper;
40g (½ cup) mixed greens, chopped;
1 egg;
120g (1 cup) flour;
3 buns, dry;
115g (½ cup) sharp cheese, cubbed.
METHOD
- Boil potatoes skin on until soft and let cool down.
- Make homemade breadcrumbs by passing dry bread through a large grater. Sift breadcrumbs to remove any large bits.
- Peel and mash cooled potatoes, then season them with salt and pepper. Combine potatoes with chopped greens (parsley and dill).
- Take a portion around 2-3 tablespoons of potatoes, form a patty and place a cube of cheese in the middle. Wrap potato mixture around cheese to secure it.
- Dredge each potato ball in flour, then dip into an egg, whisked with 2 tbsp of water, and finally cover with homemade breadcrumbs.
- Fry potato balls in 180C/350F oil for 4-5 minutes.
