Potato balls: the unique idea to reuse stale bread!

Tender inside and so crispy outside, you won't be able to stop at one! 

INGREDIENTS
 6-7 potatoes (700g);
 salt and pepper;
 40g (½ cup) mixed greens, chopped;
 1 egg;
 120g (1 cup) flour;
 3 buns, dry;
 115g (½ cup) sharp cheese, cubbed.
 
METHOD
  1.  Boil potatoes skin on until soft and let cool down.
  2.  Make homemade breadcrumbs by passing dry bread through a large grater. Sift breadcrumbs to remove any large bits.
  3.  Peel and mash cooled potatoes, then season them with salt and pepper. Combine potatoes with chopped greens (parsley and dill).
  4.  Take a portion around 2-3 tablespoons of potatoes, form a patty and place a cube of cheese in the middle. Wrap potato mixture around cheese to secure it.
  5.  Dredge each potato ball in flour, then dip into an egg, whisked with 2 tbsp of water, and finally cover with homemade breadcrumbs.
  6.  Fry potato balls in 180C/350F oil for 4-5 minutes.
