Tomato sponge cake: this recipe is a keeper!

The flavor of this cake is just amazing!

INGREDIENTS
3 tomatoes
2 cloves garlic
30g (2 tbsp) butter
4g (1 tbsp) light brown sugar
 
Dough:
2 eggs
250g (1 cup) greek yogurt
2g (1/2 tsp) salt
280g (2 1/4 cup) flour
40ml (2 1/2  tbsp) milk
10g (2 tsp) baking powder
 
METHOD
  1. Cut the tomatoes into slices and take out the seeds. In a pan add butter. When it is melted and chopped garlic cloves and place the tomato slices. Fry for 2 minutes. Sprinkle with sugar. Flip them and cook for a while. Place them in a pan.
  2. For dough:
  3. In a bowl add eggs and whisk them. Add yogurt, flour, milk, salt and baking powder. Mix it all well and pour it into the pan. Bake at 180C for 30 minutes. Serve.
