INGREDIENTS
400g rump
q.s. carrot, celery and onion
1 cup red wine
bread crumbs to taste
Grated Parmesan cheese to taste
Braised beef to taste
2 eggs
400g pipette rigate
Cream or cheese sauce
DIRECTIONS
Brown 400 g of chump with celery, carrot and chopped onion. Then add a glass of red wine and cook for 3 hours. Mince the braised beef, add 2 eggs, grated Parmesan cheese and breadcrumbs. Take the basic filling, usually used for ravioli, and stuff the pipette. Cook in boiling water and season with the sauce.
