Carbonara rice: here's a tasty variation to the typical Roman recipe

One of the traditional recipes of Roman and Lazio cuisine is definitely Carbonara. This video shows how to prepare it with a variation, that is, using rice instead of pasta. The ingredients are the same: eggs, guanciale (pork cheek), pecorino and pepper. Cut the guanciale, put it in a pan without oil and let it fry: prepare the broth for the rice. Remove the bacon and use the fat to toast the rice in the pan where it was previously cooked. . Add the broth to cook the rice. Then add the beaten egg, pecorino cheese and black pepper. Finally add the previously cooked cheek to the rice.
