BROCCOLI MUFFINS: As an appetizer or main course, this savory recipe will surprise you!

INGREDIENTS
180g broccoli
160g (1 1/4 cups) all-purpose flour
10g (3/4 tbsp) baking powder
A pinch of nutmeg
50g (1/2 cup) Parmesan cheese
60ml (1/4 cup) vegetable oil
90ml (1/2 cup) milk
2 eggs
METHOD
1. Clean the broccoli and cut it into florets. Boil for 5 minutes until tender, then drain well.
2. Place the cooked broccoli florets in a food processor and blend until you obtain a smooth purée.
3. In a mixing bowl, combine the all-purpose flour, baking powder, nutmeg, and Parmesan. Mix well.
4. Add the vegetable oil, milk, and eggs. Stir to obtain a smooth batter, then fold in the broccoli purée until fully incorporated.
5. Line a muffin tray with paper cups and fill them with the batter. Bake at 180 °C / 360 °F for about 30 minutes.
6. Serve the broccoli muffins on a serving dish and enjoy.
