TURKEY SALAD: tasty and quick!

INGREDIENTS
400g turkey breast
150g cherry tomatoes
1 tbsp Za’atar mix
Juice of 1 lemon
150g lamb’s lettuce (or mâche)
40g black olives
Olive oil, to taste
Salt, to taste
For the dressing:
100g plain whole yogurt
50g mayonnaise
Salt and pepper, to taste
METHOD
1. In a baking dish, mix the turkey breast with a drizzle of olive oil, lemon juice, and the Za’atar mix.
2. Cover with plastic wrap and let it marinate in the fridge for at least 30 minutes.
3. In a small bowl, mix the yogurt with the mayonnaise, salt, and pepper. Let it rest in the fridge.
4. Take the turkey and slice it into strips using a cutting board and knife.
5. Cook the turkey in a pan with a drizzle of olive oil, stirring frequently. Once cooked, season with salt and let it cool.
6. In a large bowl, mix the lamb’s lettuce with the cherry tomatoes (cut into wedges) and the black olives.
7. Assemble the salad on a serving plate, starting with a bed of lamb’s lettuce, tomatoes, and olives. Place the turkey on top and finish with the yogurt dressing.
