SPOON COOKIES: SOFT and ready in NO TIME! ๐ฅ๐ช

INGREDIENTS
For about 24 cookies:
2 eggs
150g (ยพ cup) of sugar
1 tsp of vanilla extract
120g (ยฝ cup) of melted butter
100ml (1/3 cup) of milk
260g (2 cups) of all-purpose flour
150g (1 cup + 3 tbsp) of potato starch
2 tsp of baking powder or baking ammonia

METHOD
1. Pour the eggs and sugar into a large bowl. Beat the ingredients with an electric mixer for a few minutes until you get a tall, whitish mixture.
2. Add the vanilla extract and mix again for a moment.
3. Add the milk and the lukewarm melted butter, and mix again until you get a smooth mixture.
4. Add the flour, sifted potato starch, and baking ammonia. Start mixing at a low speed and gradually increase the speed until you get a smooth and lump-free mixture.
5. Shape the cookies using two spoons, take small portions of the mixture, and place them on a baking sheet, spaced with parchment paper.
6. Bake at 180ยฐC (356ยฐF) for about 20 minutes.
