CATALAN CREAM: the CREAMY dessert for a FANTASTIC after dinner! π₯π

INGREDIENTS
FOR 4 PEOPLE
500ml (2 cups) milk
120g (Β½ cup) sugar
6 egg yolks
20g (2 Β½ tbsp) cornstarch
1 cinnamon stick
1 lemon (zest)

50g brown sugar

METHOD
1. Pour the milk, cinnamon stick, and lemon peel (previously removed with a peeler) into a saucepan.
2. Heat the milk until it almost boils, then let it cool slightly.
3. In a large bowl, whisk the egg yolks with the sugar using a hand whisk.
4. Add the sifted cornstarch and mix it into the egg mixture.
5. Remove the cinnamon stick and lemon peel from the now lukewarm milk.
6. Gradually add the milk to the egg mixture, stirring continuously.
7. Pour the cream back into the saucepan and bring it to a boil, stirring constantly.
8. Divide the cream into bowls and cover each bowl with cling film, making sure it touches the surface of the cream.
9. Let it cool, then refrigerate for at least 4 hours.
10. Before serving, sprinkle a handful of brown sugar over the cream.
11. Caramelize the surface using a kitchen torch.
