Orange custard muffin: the recipe for some irresistible treats

Ingredients:
- For the muffins:
1 egg
100 g of granulated sugar
8 g of vanillin
100 ml of oil
Grated orange zest
150 ml of orange juice
230 g of flour
15 g of baking powder
- For the custard:
1 egg
50 g of granulated sugar
150 ml of orange juice
Half a tbsp of corn starch
- For decoration:
Apricot jam
Grated coconut
Directions:
1. Whisk egg and sugar. Then add oil, grated orange zest and orange juice.
2. Now mix in vanillin, flour and baking powder.
3. Pour the batter into the molds.
4. Bake at 180° for 20/25 minutes, then let cool.
5. Meanwhile, make the custard by whisking egg and sugar in a saucepan.
6. Then add cornstarch and orange juice.
7. Cook on the stove a low heat until it thickens.
8. Brush the muffins with some apricot jam, then coat them in grated coconut.
9. Fill with custard using a piping bag.
