Lemon curd tart: the tasty and colorful recipe to try

Ingredients:
TART:
80g butter (room temperature)
40g sugar
1g salt
30g whole egg
130g all purpose flour
ALMONDS CREAM:
60g butter (room temperature)
60g sugar
60g whole egg
50g almond flour
10g all purpose flour
SYRUP:
30g water
30g sugar
5g light rum or 10g lemon juice
LEMON CURD:
1 whole egg
50g sugar
50g lemon juice
50g butter
2g gelatin in sheets
10g cold water
WHIPPED CREAM:
100g fresh cream
10g sugar
Directions:
1. Shortcrust pastry: mix the butter with sugar, salt, egg and flour. Form a homogeneous dough and wrap it in cling film. Leave in the fridge for 1 hour.
2. Almond cream: mix the butter with the sugar. Then add the salt, lemon zest and mix well. Finally add the eggs, the flours and form a homogeneous cream, put it in the fridge.
3. Assemble the tart and bake at 160 ° for 50 minutes.
4. Lemon curd: soak the gelatin. In a saucepan, mix egg, sugar, lemon juice, butter and gelatin.
5. Pour the curd over the tart and leave it in the fridge for 2 hours.
6. Then decorate and serve.
