INGREDIENTS

1 onion + 2 for medallions
1 yellow pepper
1 green pepper
1 carrot
4 eggs
Salt
Pepper
1 tbsp of cornstarch
1 tbsp of flour
Oil for frying
Sesame seeds

METHOD

Cut the onion, yellow pepper, green pepper, and carrot into small pieces.
Prepare the other two onions for stuffing by cutting the front and the back part of the onion. After removing those parts cut the onion into the rings and take them one by one.
In a bowl add cut vegetables, add beaten eggs, and season with salt and pepper. Mix with a spatula.
Add the corn starch and flour and mix everything well with a spatula until is all combined.
Heat the pan, add the drizzle of oil and arrange the onion rings. Fill each ring with the mixture. Sprinkle medallions with sesame seeds, cover the pan, and cook for 5 minutes.
Turn each medallion on the other side and cook until they are golden brown on both sides.
