Colorful ravioli: here's how to prepare a beautiful and delicious dish!

A delicious dish to surprise everyone!

INGREDIENTS

For the fresh white pasta:
100g all-purpose flour
1 Egg
Salt
Extra virgin olive oil
 
For the fresh green pasta:
150g of all-purpose flour
70g of Boiled spinach
1 Egg
Salt
Extra virgin olive oil
 
For the fresh red pasta:
150g of all-purpose flour
30g of Tomato paste
1 Egg
Salt
Extra virgin olive oil
 
For the filling:
100g (1/2 cup) of Ricotta
40g (1/2 cup) of Parmesan
Salt
Pepper

METHOD
  1. Prepare the fresh white pasta by mixing flour, eggs, salt, and extra virgin olive oil.
  2. Prepare the red pasta by mixing flour, eggs, tomato paste, salt, and extra virgin olive oil.
  3. Prepare the green pasta, blend the boiled spinach squeezed with the egg and mix them with flour, salt, and extra virgin olive oil.
  4. Leave each dough to rest for about 30 minutes.
  5. In a bowl add the ricotta, parmesan, salt, pepper and mix all well to prepare the filling.
  6. After 30 minutes, roll out the dough forming thin loaves without using flour. Combine the loaves starting from green, white, and then red with the help of a brush soaked in water.
  7. Roll out the dough thinly with a rolling pin and fill the pastry with the filling and close again eliminating the air inside.
  8. Cook the ravioli in water for about 5 minutes. Meanwhile, melt the butter in a pan and add the sage. Sauté the ravioli in the sauce and serve.
