Colorful ravioli: here's how to prepare a beautiful and delicious dish!

A delicious dish to surprise everyone!

100g all-purpose flour

For the fresh green pasta:
150g of all-purpose flour
70g of Boiled spinach
1 Egg
Salt
Extra virgin olive oil
Extra virgin olive oil
For the fresh red pasta:
150g of all-purpose flour
30g of Tomato paste
1 Egg
Salt
Extra virgin olive oil
Extra virgin olive oil
For the filling:
100g (1/2 cup) of Ricotta
40g (1/2 cup) of Parmesan
Salt
Pepper
METHOD
- Prepare the fresh white pasta by mixing flour, eggs, salt, and extra virgin olive oil.
- Prepare the red pasta by mixing flour, eggs, tomato paste, salt, and extra virgin olive oil.
- Prepare the green pasta, blend the boiled spinach squeezed with the egg and mix them with flour, salt, and extra virgin olive oil.
- Leave each dough to rest for about 30 minutes.
- In a bowl add the ricotta, parmesan, salt, pepper and mix all well to prepare the filling.
- After 30 minutes, roll out the dough forming thin loaves without using flour. Combine the loaves starting from green, white, and then red with the help of a brush soaked in water.
- Roll out the dough thinly with a rolling pin and fill the pastry with the filling and close again eliminating the air inside.
- Cook the ravioli in water for about 5 minutes. Meanwhile, melt the butter in a pan and add the sage. Sauté the ravioli in the sauce and serve.
