Sandwich bread: how to make it perfect at home

Ingredients:
Roux (basic preparation for yeast products):
120 ml of water
2 tablespoons of flour
Mass:
1 kg of flour 00
2 eggs
11 g of powdered brewer's yeast
2 tablespoons of sugar
1 teaspoon of salt
230 ml of warm water
2 tablespoons of butter
Directions:
1. Roux: in a pan, dissolve the flour in the water. Form a cream and reserve.
2. Dough: mix the flour with the eggs, yeast, sugar and salt.
Then add the water and butter. Form a homogeneous dough and let it double in volume.
3. Divide the dough into 4 parts, roll them out and roll them up.
4. Place them in the mold and let them double again in volume.
5. Brush an egg and bake at 356°F (180°) for 30 minutes.
