Christmas cookies: the perfect recipe for holiday season

Ingredients:
- For about 18 cookies:
220 g of flour
80 g of potato flour
125 g of powdered sugar
160 g of cold butter
3 medium egg yolks
1 packet of vanillin
- For the filling/icing:
Pistachio cream
150 g of dark chocolate
Chopped hazelnuts
Chopped pistachios
Directions:
1. In a bowl mix flour, potato flour, powdered sugar and vanillin.
2. Add the butter cut in pieces.
3. Knead until you get a sandy-like texture.
4. Mix in the eggs and knead.
5. When you get a block of dough, wrap it in plastic wrap and let it rest in the fridge for 2 hours.
6. After that, place the dough on a baking paper sheet covered with some flour and spread it with a rolling pin to make a layer 4mm thick.
7. Cut the dough with some Christmas-themed cookie cutters.
8. Place the cookies in a baking tray covered in baking paper.
9. Make a whole in the middle of half the cookies you got.
10. Bake in a pre-heated static oven at 160 degrees for about 13/14 minutes. Then let them cool.
11. Place half a teaspoon of pistachio cream in the middle of the cookies without hole. Then cover with the other ones.
12. Melt the chocolate in a water bath or in the microwave and use it to cover the cookies dipping them only in one spot.
13. Pour some chopped hazelnuts or pistachios on the chocolate.
