Kimpura recipe: simple and classic Japanese dish to fall in love with!

We found the best way to fry an eggplant!
INGREDIENTS
INGREDIENTS
5 small eggplants;
1 egg;
200ml (2/3 cup) ice-cold water;
60g (1/2 cup) flour;
1 pinch of salt
vegetable oil for frying.
METHOD
- Slice eggplants into quarters lengthwise, then make 4-5 slits on each quarter cutting up to the stem. Flatten each eggplant with your palm to form a fan-like shape.
- Whisk ice-cold water with egg, salt and flour.
- Dust each eggplant fan with flour and dip into the batter. Let the excess drip off.
- Deep fry in preheated (180C/350F) oil until golden and crispy, for around 5 minutes. Draint on paper towels before serving.
