Pinwheel cake: how to make an amazing dessert in a few steps!

The result is surprising!

For the cake:
8 eggs;
150 g (5 oz) flour;
200 g (7 oz) sugar;
50 g (1.7 oz) cocoa powder;
A pinch of salt;
60 g (2 oz) honey.
For the syrup:
200 ml (7 fl.oz) water;
100 g (3.5 oz) sugar;
5 tbsp cognac.
For décor:
4 cups sweetened cream;
350 g (12.3 oz) cherry jam;
Chocolate, cherries, cherry syrup for serving.
METHOD
- Preheat oven to 200C/400F. Cover two large baking trays (36x32 cm) with parchment.
- Divide ingredients for the cake in half to make two cake layers. Beat eggs, salt with sugar and honey until very light, creamy and stiff peaks have formed.
- Mix cocoa and flour together then start adding into egg mixture gradually, while constantly whisking. Pour the batter on one baking tray and bake for 10-12 minutes.
- Repeat with another half of the ingredients for the second cake layer.
- Let cool down, remove parchment. Cut two 20 cm circles out of one cake and slice another one into 4 strips lengthwise.
Beat sweetened cream until stiff peaks form. - Cover cakes with jam and cream.
- Roll cake strips to form a pinwheel as shown in the video. Cover both the top and bottom of it with round cake layers. Chill in the fridge for at least an hour.
- Cover with leftover whipped cream and decorate with chocolate and cherries to your likening.
