Bread fritters: the perfect alternative to same old bread!

Cook them 3 minutes each side and the result will surprise you!
INGREDIENTS

2 eggs;
½ cup mozzarella;
3-4 springs parsley, chopped;
2 ½ cup flour;
1 ½ tsp baking powder;
¼ cup warm milk;
1 tsp salt;
1 tsp sugar.
METHOD
- Whisk eggs, salt, sugar, cheese and chopped parsley together.
- Add flour and baking powder. Combine until crumbly dough forms, then pour in some warm milk and knead until smooth.
- Form the dough into a ball, brush with vegetable oil and set aside, covered, at room temperature for around 30 minutes, for the gluten to relax and the dough to become soft and smooth.
- Roll out the dough into around 1 cm thick disk. Cut out round patties and use dough scraps to re-roll and form some more patties.
- Pre-heat vegetable oil over medium-low heat and fry each patty for 3 minutes on each side, making sure to cover the pan with a lid in-between flipping. Serve right away.
