Crêpes Suzette: the original recipe with flambeed orange sauce!

A French classic that is fun and easy to make at home! With the flavor of orange, the result is too delicious not to try!
INGREDIENTS
INGREDIENTS
For the crepes:
140 g (4.9 oz) flour;
a pinch of salt;
1 tsp sugar;
2 eggs;
2/3 cup water;
2/3 cup milk;
2 tbsp vegetable oil.
For the sauce:
1 orange (zest);
2 oranges (juice);
1/3 cup sugar;
1 tsp vanilla extract;
3 tbsp cold butter;
¼ cup rum.
METHOD
- For the crepes whisk sugar and salt with one egg. Pour milk, oil, and water in and whisk again to combine.
- Start pouring liquids into flour in thirds, mixing in-between to get a smooth batter. Let sit in the fridge.
- Pour a ladle of batter onto the preheated pan and tilt the pan to cover the bottom of it. Cook crepes until brown on both sides.
- To make the sauce add orange juice, zest, and sugar into a pan. Cook it over medium heat until half of the liquid evaporates. Add vanilla and rum. Use burner to burn the alcohol out, then add cold butter and remove from heat.
- Pour some sauce into a plate and cover each crepe with it from both sides.
Return folded crepes into a pan with leftover sauce and heat everything through over medium heat, until the sauce starts to bubble away. - Serve warm topped with more orange zest.
