Mini Vegetarian Puff Pastry Pizzas: perfect for your next party

Ingredients
2 Rectangular Sheet of Puff Pastry
1/2 Zucchini
1/2 Aubergine
1/2 Small Onion
20 g Goat Cheese &/or Blue Cheese
50 g Arugula
Pizza Sauce
3 Medium Tomatoes
12 Black Olives
2 Chili Peppers , thinly sliced
2 Rectangular Sheet of Puff Pastry
1/2 Zucchini
1/2 Aubergine
1/2 Small Onion
20 g Goat Cheese &/or Blue Cheese
50 g Arugula
Pizza Sauce
3 Medium Tomatoes
12 Black Olives
2 Chili Peppers , thinly sliced
Directions
Wash all the vegetables. Thinly slice tomatoes, zucchini, olives and onion. Slice or dice the aubergine. Line a baking tray with baking sheet. Now roll out puff pastry. Cut rounds out of the pastry. Transfer them onto the baking tray. Spread pizza sauce over and top with vegetables, cheese and olives. Bake in a preheated oven at 200C/400F for 15 minutes. When ready, top with arugula and serve.
