Sweet Carnival Ravioli: A Perfect Dessert With An Irresistible Filling

For the dough:
15g lard
65g water
65g semolina
65g all-purpose flour
Salt to taste.

Garnishing:
180g ricotta
80g almonds
2 tablespoons sugar
Lemon zest

Directions:
Combine all the ingredients for the dough and knead until dough is smooth. Wrap in plastic wrap and let stand. Roll out the dough until you have a thin pastry, then shape the ravioli. Make the filling by combining all the ingredients. Add onto the pastry and cover. Deep fry the ravioli in boiling oil. Sprinkle with powdered sugar.
