Ricotta pies: a sweet treat ready in no-time!

Do you have some leftover ricotta? How about making these ricotta pies? They are so delicious!
INGREDIENTS
INGREDIENTS
Dough:
150g (1 1/5 cup) Flour
40g (3 tbsp) Sugar
2 Eggs
25g (1 1/2 tbsp) Oil
A pinch of salt
Filling:
200g (1 cup) Ricotta cheese
50g (1/4 cup) Sugar
4 Egg yolks
Lemon zest
4 Egg whites
A pinch of salt
Decoration:
Icing sugar
METHOD
- For dough: In a bowl put eggs, add sugar, a pinch of salt and whisk it. Add oil. Whisk and stir the flour. Mix it and add baking powder. Knead the dough well and leave in the fridge.
- For filling: In a bowl put cheese, egg yolks, sugar and lemon peel. Mix it with a hand mixer. In another bowl put the egg whites and add a pinch of salt. Whisk it. Combine these two mixtures.
- Take out the dough from the fridge and spread it. Divide it into 6 parts. Put the squares into an oiled pan. Add filling and close them on top. Bake at 180C for 15 minutes. Decorate with icing sugar.
