Pineapple tarts: Sweet bite sized treats ready in no time

INGREDIENTS
 220 g (7.7 oz) flour;
 120 g (4.2 oz) butter;
 2 egg yolks;
 1 tbsp powdered sugar;
 a pinch of salt;
 ½ cup pineapple filling;
 egg wash.
 
METHOD
  1.  Preheat oven to 180C/350F.
  2.  Whisk softened butter with powdered sugar and egg yolks until smooth. Add salt and flour, then knead with your hands until smooth.
  3.  Wrap the dough in plastic and chill in fridge for 1 hour.
  4.  Cut the chilled dough into small pieces and roll each into a ball.
  5.  Flatten the ball with your fingers and place some pineapple filling in the middle, wrap the dough around the filling and roll into a ball again.
  6.  Brush each ball with egg wash and bake for 20 minutes. Leave to cool down before serving.
