Pineapple tarts: Sweet bite sized treats ready in no time

INGREDIENTS
220 g (7.7 oz) flour;
120 g (4.2 oz) butter;
2 egg yolks;
1 tbsp powdered sugar;
a pinch of salt;
½ cup pineapple filling;
egg wash.
METHOD
- Preheat oven to 180C/350F.
- Whisk softened butter with powdered sugar and egg yolks until smooth. Add salt and flour, then knead with your hands until smooth.
- Wrap the dough in plastic and chill in fridge for 1 hour.
- Cut the chilled dough into small pieces and roll each into a ball.
- Flatten the ball with your fingers and place some pineapple filling in the middle, wrap the dough around the filling and roll into a ball again.
- Brush each ball with egg wash and bake for 20 minutes. Leave to cool down before serving.
