Graham Cracker Crust:
1 1/2 cups graham cracker crumbs 9 sheets, broken up
1/4 cup (50 g) packed brown sugar
1/2 teaspoon cinnamon
7 tablespoons (100g) unsalted butter, melted
Pumpkin Cheesecake Filling
1 cup (8 oz. or 227 g) low-fat cream cheese, room temperature
1/2 cup pumpkin purée
1/4 cup (40 g) brown sugar unpacked
1 1/2 teaspoons cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg Pinch of cloves optional 1 teaspoon vanilla
1 1/2 cups (4 oz. or 114 g) light whipped topping
