Mushroom Risotto: Creamy, Tasty & Easy To Make

Risotto is definitely a perfect autumn dish, combined with mushrooms it is even more so.
Ingredients:
180g rice
300g mixed mushrooms
250g sliced porcini mushrooms
celery, carrot and onion
30g grated cheese
a knob of butter
chopped parsley
olive oil, salt and pepper
Directions:
Wash and cut the mushrooms, cook in a pan with garlic, oil and parsley. Prepare a broth with celery, carrot and onion. Once ready, pour into the pan while cooking mushrooms. Add the rice and cook, towards the end of cooking add the rest of the broth, salt and butter.
