Creamy chicken meatballs in mushroom sauce: a delicious and simple dish!

This chicken meatballs in creamy mushroom sauce recipe is ready in 20 minutes making an easy weeknight dinner.
INGREDIENTS
250g chicken breast
200g ham
45ml (1/4 cup) chicken broth
pinch rosemary
salt and pepper to taste

450ml (1 3/4 cups) chicken broth
Flour
250g mushrooms
50ml (3 tbsp) olive oil (divided)
Vegetable oil (for frying)
METHOD
- Put the chicken and ham into a bowl of a food processor or blender. Season with a pinch of rosemary, salt, and pepper. Pour some broth in and blend until smooth.
- Transfer into a bowl and set aside.
- Cut off mushrooms' stems and cut mushrooms in quarters. Set aside.
- Grease your hand with olive oil and form small meatballs from the meat mixture.
- Coat meatballs in flour and fry in the preheated oil for 5 minutes or until golden.
- Heat some olive oil in another frying pan, add mushrooms and cook for 5-7 minutes or until golden.
- Pour in broth and add the meatballs. Cook until the broth has evaporated.
- Turn off the heat and let sit for 3-4 minutes.
- Transfer to a serving bowl and enjoy.
