Stuffed eggplants: the tasty recipe with chicken and vegetables

Ingredients:
2 eggplants
Olive oil
Salt
Dried oregano
1 large onion
1 red bell pepper
300 g of chicken sausage
300 g of mushrooms
200 g of cherry tomatoes
2 garlic cloves
Fresh parsley
Directions:
1. Cut eggplants in half and carve the inside, then brush with olive oil.
2. Season with salt and bake at 200° for 20 minutes.
3. Fry eggplant pulp in a pan with olive oil, salt and oregano.
4. Use the same pan to fry some chopped onion. Then add diced bell pepper and chicken sausage.
5. Now mix in mushrooms and tomatoes. Lastly, add eggplant from before.
6. Season with chopped parsley, black pepper and garlic.
7. Use this mixture to stuff the eggplants, and bake for 15 minutes more.
