Meringue Christmas log: the recipe to make a delicious and beautiful dessert

Ingredients:
- For the batter:
5 eggs
120 g of sugar
90 g of flour
1 tsp of vanilla
1 pinch of salt
- For the filling:
2 egg yolks + 1 whole egg
60 g of sugar
150 ml of lemon juice
100 ml of water
25 g of corn starch
50 g of butter
- For the meringue:
90 g of egg whites
180 g of sugar
Directions:
1. Whisk eggs and sugar until you get a fluffy mixture.
2. Add flour, salt and vanilla.
3. Pour the batter in a tray coated with baking paper and bake at 170° for 10 minutes.
4. Roll when it's still hot and let cool like this.
5. Mix eggs and sugar in saucepan, then stir in corn starch.
6. Lastly add lemon juice and bring to a boil stirring until it thickens.
7. Turn off the stove and add butter, then cover the custard with some plastic wrap and let cool.
8. Fill and roll the cake.
9. Make the meringue by mixing egg whites and sugar, then cook in a water bath until it reaches 60°.
10. Then whip the meringue, and use it to coat the log's surface.
11. Use a blow torch to make it crispy and golden.
