  • Light Brown Sugar – you can use any coarse, granulated sugar (white sugar, brown sugar, raw sugar, or turbinado sugar)
  • Powdered Sugar – used for dusting the finished puff pastry

For this recipe, you can use either freshly sliced pineapple or canned pineapple slices. If using canned pineapple, make sure to drain and dry the slices first with clean towel paper. Using frozen and thawed pineapple is not recommended, as it won’t hold its shape.

Instead of dusting the Pineapple Wrappers with powdered sugar, you can also use the following toppings:

  • Drizzle with a cream cheese glaze: mix 4 ounces of cream cheese, room temperature, 1/2 cup confectioners' sugar (or powdered sugar), sifted 1 teaspoon pure vanilla extract, and 3 to 4 tablespoons milk
  • Toss with cinnamon sugar made from 1/4 cup granulated sugar and 1 tablespoon cinnamon.
  • Drizzle with caramel sauce (like dulce de leche).

The puff pastry should be completely thawed so it’s pliable enough to roll out but still cold. The best is to leave it to thaw overnight in the fridge instead of leaving it on the kitchen counter at room temperature. If the pastry is too warm, it won’t puff enough. To make sure you get a nice puff, place the formed flowers in the fridge for half an hour.

Pineapple slices

Instructions
