PUMPKIN FLAN: quick, easy and light! ๐ฎ

INGREDIENTS (for 6 flan)
500g pumpkin
100g Parmesan cheese
4 eggs
1 tbsp cream
1/2 tsp nutmeg
Salt
Oil
Rosemary
Melted cheese

METHOD
1. Cut the pumpkin into 4 parts and remove the seeds.
2. Season with oil, salt, and rosemary, and bake in the oven at 200ยฐC for 30 minutes. Once cooked, you can easily remove the skin.
3. Put the pumpkin in a large bowl and add the eggs, cream, nutmeg, and salt. Blend everything with an immersion blender.
4. Once well blended, fill 6 aluminum or silicone molds and place them in a high-sided baking tray. Fill the tray with water until it reaches halfway up the molds.
5. You can bake in the oven by placing the tray on another tray or on the grill.
6. Leave in the oven for about 1 hour at 200ยฐC (if the surface darkens, place a sheet of aluminum foil on top).
7. After baking, let it cool.
8. Once placed on a plate, pour your favorite melted cheese on top.
