INGREDIENTS
600g (2 1/2 cups) of ricotta cheese
150g (3/4 cup) of sugar
250g (1 cup) of cream cheese
7g (1 tbsp) of corn starch
7-8 sheets of phyllo dough
60g (1/4 cup) of butter (melted)
3 eggs
Vanilla essence
Lemon (zest)
1 lemon (juice)
Powdered sugar

METHOD

In a bowl add the part of the ricotta cheese and sugar and mix until sugar dissolves. Add the rest of the ricotta and mix it all well together. Add the cream cheese, and corn starch and mix.
Arrange the phyllo dough sheet to the working surface and brush with melted butter until the dough is completely covered with butter. Add 3-4 sheets and repeat the process with brushing. Separately brush one more dough to prepare it for later.
Transfer the prepared phyllo dough sheets to the cake mold (20cm - mold size) and arrange it well on all sides. Add the separately prepared phyllo dough sheet and arrange it on all sides of the mold.
In a bowl beat the eggs with the vanilla essence with an electric mixer and create the creamy egg mixture.
Add the lemon zest and lemon juice into the ricotta cheese mixture and whisk. Gradually add the egg mixture and mix all together well.
Pour the mixture into the mold and cover well with the phyllo dough on all sides. Brush the top part of the cake with melted butter.
Transfer the cake into the oven and bake at 175°C/347°F for 60 minutes and decorate with powdered sugar.
