Grilled octopus mayo: the sublime recipe to enjoy with your guests!

Don't throw away the boiling water of the octopus, you can make delicious mayonnaise in a few seconds!
INGREDIENTS

1 medium octopus, cleaned;
150ml (1/2 cup + 2 tbsp) vegetable oil.
150ml (1/2 cup + 2 tbsp) vegetable oil.
METHOD
- Dip octopus tentacles in the boiling water to curl them up.
- Place the whole octopus into a pot of cold water and place over medium-low heat. Cook for 1 hour after boiling.
- Leave the octopus to cool down in the water. Take 250 ml of water out of the pot and blend it, adding vegetable oil, until mayo forms. Season to taste.
- Cut the octopus and grill it. Serve with mayonnaise.
