Nuggets: crunchy and ready in no time!

INGREDIENTS

500g (3 1/3 cups) potatoes, cooked
9g (1 1/2 tsp) salt
60g butter, softened
30ml (2 tbsp) milk
Flour
1 egg, lightly beaten
Breadcrumbs
Vegetable oil (for frying)
METHOD
- In a bowl mash cooked potatoes with milk, butter and salt until creamy.
- Transfer creamed potatoes into the piping bag without a nozzle.
- Line a freezer-safe airtight container with plastic wrap. Pipe long-shaped pieces of potatoes into the container. Secure with a lid and freeze for 2 hours.
- Cut each potato stick into 4-5 pieces.
- Set up a breading station and coat each potato piece in flour, then dip in beaten egg and then coat in breadcrumbs.
- Fry nuggets in the preheated oil until lightly golden.
- Serve immediately.
