6 ingredients sponge cake: how to make a fluffy cake without baking powder!

This is the no-fail recipe to prepare the softest and spongiest cake:

4 eggs;
½ tsp vanilla;
90 g (4.7 oz) sugar;
135 g (4.7 oz) flour;
45 ml (1.6 fl. oz) vegetable oil;
45 ml (1.6 fl. oz) milk.
METHOD
- Preheat your oven to 170C/340F. Cover 18 cm cake pan with parchment.
- Whisk egg whites until they are foamy. Start adding sugar in portions while still beating with a hand mixer.
- Whisk egg yolks with vanilla and carefully fold it into the whites.
- Sift the flour into eggs and carefully fold it in too.
- Whisk milk with oil, take 1.4 of the batter and combine it with liquids. Then fold it back into the batter again.
- Carefully pour the batter into prepared pan and bake for 30 minutes.
