No-bake strawberry crumble cheesecake: ready with 6 ingredients!

INGREDIENTS
300 g (10 oz) cookies;
120 g (120 g) butter, melted;
500 g (1 pound) mascarpone;
300ml (10 oz) full-fat sweetened cream;
¼ tsp vanilla;
1 cup strawberries, sliced.
METHOD
- Cover the bottom and the sides of around 18 cm springform with parchment.
- Blend cookies to form crumbs, add melted butter and stir to combine.
- Press 2/3 of buttery crumbs to form an even crust over the bottom and the sides of the pan.
- Whip mascarpone with sweetened cream and vanilla until stiff peaks form.
- Carefully fold strawberries into the cream and spread the creamy filling over the cookie crust. Top with leftover crumbs. Chill before serving.
