No-bake strawberry crumble cheesecake: ready with 6 ingredients!

INGREDIENTS
 300 g (10 oz) cookies;
 120 g (120 g) butter, melted;
 500 g (1 pound) mascarpone;
 300ml (10 oz) full-fat sweetened cream;
 ¼ tsp vanilla;
 1 cup strawberries, sliced.
 
METHOD
  1. Cover the bottom and the sides of around 18 cm springform with parchment.
  2. Blend cookies to form crumbs, add melted butter and stir to combine.
  3. Press 2/3 of buttery crumbs to form an even crust over the bottom and the sides of the pan.
  4. Whip mascarpone with sweetened cream and vanilla until stiff peaks form.
  5. Carefully fold strawberries into the cream and spread the creamy filling over the cookie crust. Top with leftover crumbs. Chill before serving.
