Potato and tomato eggs: one meal in one pan

Ingredients:
4 eggs
1 medium onion
1 medium potato
2 tomatoes
4 tablespoons olive oil
1/2 teaspoon of tomato paste or tomato puree
Salt and pepper
 
Directions:
Dice the potatoes and also cut onion and tomatoes. Cook potatoes and onion in a pan with oil, then add salt and pepper. Add the tomatoes and leave to soften everything, at this point you can add the eggs and cook them. Add the parsley and serve.
