How to make sun-dried tomatoes in olive oil

Ingredients:
1 kg sun-dried tomatoes
1 liter white vinegar
500ml white wine
4 cloves of garlic
2 tablespoons oregano
4 chili peppers
1 tablespoon fennel seeds
250 ml extra virgin olive oil
150ml sunflower oil
 
Directions:
In a large pot, pour vinegar and white wine. Put on the stove and bring to a boil, switch off. Then put the tomatoes and mix them with your hands. Then transfer them on another clean kitchen towel. Prepare the oil (50ml olive oil and 50ml seed oil), mixing the two types and then add the tomatoes, garlic, fennel and chilli. Then put everything in the sterilized jars. Do not close them until no bubbles remain. Meanwhile cover with a napkin.
