Eclair Cake: a delicious and easy biscuit dessert!

Total Time: 4 hours 10 minutes
Ingredients:
1 package (3.4 oz) instant vanilla pudding mix
3 cups milk
1 1/2 cup heavy whipping cream, beaten to stiff peaks
20-22 Butter biscuits
ICING
6 Tbsp milk
1 cup confectioner’s sugar
3 Tbsp butter, melted
3 Tbsp cocoa powder
Pinch of salt
METHOD:
In a medium bowl, whisk together instant vanilla pudding mix and milk. Cover and let cool in the refrigerator for 1 hour.
When you have 10 minutes left for the pudding to chill, beat heavy whipping cream until it reaches stiff peaks.
Remove pudding from the refrigerator and fold in the heavy cream.
In a deep baking dish, add a layer of butter biscuits to the bottom. Add half of the pudding mixture on top. Add another layer of butter biscuits on top, then top with the other half of the pudding mixture. Top with a final layer of butter biscuits. Set aside.
In a small bowl, whisk together ingredients for the chocolate icing. Spread chocolate icing over the top layer of cookies.
Refrigerate overnight, or for at least a few hours, before serving.
