Lemon Caprese Cake (Grain-Free, Gluten-Free)

Ingredients:
100g peeled almonds
100g white chocolate
2 eggs
1 tablespoon potato starch
2 tablespoons lemon juice
Lemon peel
1 teaspoon baking powder
600g powdered sugar
60g sunflower oil
30g caster sugar
pinch of salt

Directions:
Chop the almonds with powdered sugar, separately also chop the white chocolate. Divide the egg whites from the yolks. Beat the egg whites with a pinch of salt. Add the lemon zest and whisk to the yolks, then add the lemon juice, the olive oil, the mixture of almonds, potato flour and white chocolate. Add the whipped egg whites and mix gently, then add the baking powder. Pour into a baking pan and bake at 165°C (330°F) for 55 minutes.
