Fluffy lemon bundt cake: perfect for a teatime treat or as a birthday or celebration cake!

A delicious, moist all-in-one lemon sponge! 
 
INGREDIENTS
3 eggs
150g (3/4 cup) sugar
a pinch of salt
100ml (¼ cup + 3 tbsp) vegetable oil
125g (1/2 cup) vanilla yogurt
250g (1 cup + 2/3 cup) flour
16g (2 tsp) baking powder
2g (1 tsp) lemon zest
60 ml (4 tbsp) lemon juice
Powdered sugar (for decoration)
Lemon zest (for decoration)

METHOD
  1. Preheat the oven to 175°C/350°F.
  2. In a bowl beat 3 eggs with sugar and a pinch of salt. Pour in oil and beat to combine.
  3. Add vanilla yogurt and continue to beat until smooth and pale.
  4. In another bowl mix sifted flour, baking powder, and lemon zest.
  5. Gradually add dry ingredients to the wet ingredients and stir until incorporated. Add lemon juice and mix well.
  6. Transfer into a greased bundt cake mold and bake for 35 minutes.
  7. Let cool a bit, sprinkle with powdered sugar and lemon zest on top, and enjoy.
