Sicilian Cassatelle With Ricotta: This Recipe Will Drive You Crazy

Ingredients:
Dough:
500g Manitoba flour
50 g sugar
50g lard
5g salt
270g lukewarm milk
1 egg
Orange extract or grated peel of an orange
20g fresh yeast
For ricotta filling:
500g well-drained sheep ricotta
150g powdered sugar or finely ground granulated sugar
pinch of cinnamon
To decorate:
sugar
cinnamon

Directions:
Dough: dissolve the yeast in milk, then mix flour and sugar in a bowl. Knead the dough by adding the dissolved yeast and the rest of the ingredients. Let it rise for at least 2 hours.
Filling: mix all the ingredients together until creamy and refrigerate.
Shape some 90g balls, roll and fill them. Seal by creating half-moons and deep fry in hot oil. Coat in sugar and cinnamon.
