Put the saucepan in the sand and the coffee comes out from "nowhere"
published on 25 August, 2018 at 09:28
It looks like magic, but it's just the typical way of making coffee in Turkey. A large pan is filled with sand or soil, placed on a stove and heated over low heat, then small pans (called cezve) are placed. Inside each pan there's water and very fine ground coffee. When the temperature causes the water to boil, the pan is slightly moved and stirred so that the coffee is poured into a cup. When it looks like it has finished, it is still put in the sand and covered for about a half by the hot sand, so as to make the coffee rise again and so on.
