Brioche with feta and olives: very fluffy and fragrant!

INGREDIENTS
350ml (1 1/2 cups) lukewarm milk
1 tbsp sugar
7 g dry yeast
1 tsp salt
1 egg
1 egg white
1 egg yolk
600g (4 3/4 cups) flour
80g soft butter
Sesame seeds
100g feta cheese
5 tbsp olives, chopped
1 tbsp sugar

METHOD
- In a bowl mix together warm milk with sugar and yeast, add in 1 egg and 1 egg white. Sift in the flour and add in butter. Let the dough rise for 1 hour. Divide into the 12 pieces, cover them and let rest for 15 minutes.
- Fill them with feta cheese and olives, dip into olive oil and transfer to the baking pan, let them rise for another 20 minutes and spread with egg yolk, and sprinkle with sesame seeds.
- Bake at 180°C (360°F) for 40 minutes.
