Pizza Dough with a Poolish: the secret to make the perfect pizza!

It will be the best homemade pizza ever!
INGREDIENTS
For a pan 30x40:
Leaven:
• 200g / 1.6 cups flour (all purpose)
• 200ml / 6.76oz water
• 10g brewer's yeast
• 130g / 1.4 cup flour (all-purpose)
• 5g honey
• 65ml / 2.2oz water
• 8g salt
METHOD
- Pour yeast and flour into the water. Stir and let rise for 15 minutes.
- Add salt, honey, water and sourdough to the flour. Mix. Let rise for 2 hours. Fold the dough several times and form a loaf of bread. Leave to increase the volume 3 times. Mash with fingers and stretch the dough to the size of a baking sheet. Top with tomato sauce.
- Bake for 20 minutes at 180 ° C / 350 ° F. Cut into strips. Put cheese and prosciutto on top.
