Pizza Dough with a Poolish: the secret to make the perfect pizza!

It will be the best homemade pizza ever! 
 
INGREDIENTS
For a pan 30x40:
Leaven:
• 200g / 1.6 cups flour (all purpose)
• 200ml / 6.76oz water
• 10g brewer's yeast
 
• 130g / 1.4 cup flour (all-purpose)
• 5g honey
• 65ml / 2.2oz water
• 8g salt
 
METHOD
  1. Pour yeast and flour into the water. Stir and let rise for 15 minutes.
  2. Add salt, honey, water and sourdough to the flour. Mix. Let rise for 2 hours. Fold the dough several times and form a loaf of bread. Leave to increase the volume 3 times. Mash with fingers and stretch the dough to the size of a baking sheet. Top with tomato sauce.
  3. Bake for 20 minutes at 180 ° C / 350 ° F. Cut into strips. Put cheese and prosciutto on top.
