Langues de chat biscuits recipe: light and crunchy French biscuits

Ingredients:
40g egg white
Vanilla oil
50g Unsalted butter
60g Powdered sugar
35g Cake flour
8g Almond flour
Directions:
Put the butter and sugar into a bowl and beat using an electric hand whisk until pale and smooth. Beat in the flour. Add the vanilla and then beat in the egg whites. Spoon the mixture into a piping bag and pipe straight lines of the mixture. Bake the biscuits for 10 minutes, or until light golden-brown. Roll the biscuits then add chocolate if you desire.
