Italian Lemon-Ricotta Cake (Migliaccio Cake): a Neapolitan recipe for a cake rich in flavor

Migliaccio dolce is a semolina cake and a traditional Neapolitan recipe. This rich dessert dates back a long time ago and is by far one of the most popular cakes in Italy!

INGREDIENTS
200g semolina
250g sugar
40g butter
500g milk
500g water
1 orange
1 lemon
4 whole eggs
350g ricotta
pinch of salt
Pine nuts
Raisins
Orange peel
Candied citron

DIRECTIONS
Heat the milk and water with orange and lemon peel, a pinch of salt and butter; When you reach the boiling point, remove the peel. Pour the semolina by gently sprinkling it in and mix well until it thickens. In a bowl put the sugar and the eggs, then mix with the whisk. Add the ricotta, vanilla, and grated orange and lemon zest. Now add the semolina to the mixture and mix well. Put candied fruit, pine nuts and raisins. Pour into a round pan and bake at 180°C (360°F) for 1 hour.
