A fluffy flourless cake that everyone will love!
INGREDIENTS

520g ricotta cheese
140g (5/8 cup) sugar
60g (1/2 cup) potato starch
2 tsp lemon zest
Salt 1/3 tsp
4 egg whites
4 egg yolks
Powdered sugar

METHOD
- In a bowl beat egg whites. In another bowl beat egg yolks with sugar, lemon zest, and cheese together. Add in potato starch, salt, and egg whites.
- Transfer mixture to the baking pan and bake at 170°C (340°F) for 40 minutes.
- Sprinkle with powdered sugar and lemon zest.
