How to clean and cook octopus: a simple method for an excellent result

After buying a fresh octopus, start to clean it by removing the part of the head with eyes, mouth and horny beak, which you will find in the middle of the tentacles. Fill a pot with cold water, half a glass of vinegar, half a lemon and bay leaves. Put the octopus in the pot and add some salt. Boil for 25 minutes if you use a pressure cooker; 2 hours if you use a normal pan (low heat). Then prepare the octopus as you prefer and serve.
